Hot Brown Mac And Cheese

INGREDIENTS:

8 pieces of Stone cross bacon, cooked and crumbled
1# of gamelli or other short pasta
4 tablespoons bacon grease
1 teaspoon chopped garlic
4 tablespoons flour
2 cups milk
2 cups shredded cheddar cheese (such as Kenny's KY White cheddar)
1 pint cherry tomatoes cut in half
1/2 pound Marksbury Smoked chicken, skin removed and shredded
1/2 cup crushed Cheese-Its or bread crumbs
1/2 cup shredded Parmesan cheese
2 tablespoons chopped parsley
salt and pepper to taste

INSTRUCTIONS:

In a large pot bring on gallon of water to a boil and cook pasta to your
desired degree of doness, 9-12 minutes and drain.  While the pasta is
cooking melt butter in a 2 quart sauce pot and cook garlic for 30
seconds on medium high heat then whisk in flour and cook for two
minutes.  Slowly whisk in the milk and cook until thickened 5-10
minutes.  Add the cheddar one handful at a time whisking to combine,
letting all the cheese melt before adding more cheese.  When all the
cheese is added taste for seasoning and then combine the sauce, pasta,
bacon, tomatoes, and chicken in a large bowl and place into a greased 9
by 13 baking dish then top with crumbs, parm, and parsley.  Bake in a
350 degree oven for 10 minutes or until the top is crunchy and the
cheese is bubbly.
