GRILLED CHICKEN TORTELLINI WITH CHIPOTLE BASIL CREAM

INGREDIENTS:
2 tbls butter 1 small white onion finely chopped 2 cloves garlic minced 6 leaves of basil – chiffonade 1 chipotle pepper, finely chopped 3 tbls cooking sherry 1 &1/2 pints heavy cream 3 tbls chicken consommé 1/4 cup grated Asiago or Romano cheese 1 medium tomato - medium sized dice 1/2 cup sliced porcini mushrooms 24 ounces grilled chicken breasts cup into 1/4 cubes 48 ounces cheese tortellini Salt & Pepper to taste

INSTRUCTIONS:
Warm pan to medium-high heat Add butter, once melted add onions, garlic and peppers. Sauté until onion is translucent. Add mushrooms, chicken, tomatoes and basil to pan; continue to sauté 1-2 minutes. Deglaze pan with sherry. Add cream to pan. Bring to a simmer and hold for 2-3 minutes. Add cheese blend, stirring to incorporate. Finally add pasta and toss to coat. Allow to cook 2 minutes stirring constantly until pasta is warmed through. Enjoy with crusty bread and a good Chardonnay! Recipe makes enough for 6 hungry adults COOKING TIME: 30 minutes
