FIDEOS AL ESTOFADO

INGREDIENTS:
10 oz. stewing meat 1 can diced tomatoes 1/2 cup water or beef broth 1 pepper julienned 1 small onion chopped 1 bay leaf 1 tsp minced garlic 4 tbl. oil 1 tbl. tomato paste salt and pepper grated cheese 2 cups pasta

INSTRUCTIONS:
Take the oil and heat on medium high. While heating, take the meat and cut into 2 inch pieces. Salt lightly on both sides. When the oil is ready, brown the meat on all sides and then put aside. Take the onion and pepper and saute in the oil used for meat. After about 4 minutes, add garlic, tomato paste, bay leaf, diced tomatoes, and beef broth. Let simmer for about 1 hour. Serve atop pasta and add grated cheese. Serves two. COOKING TIME: 30 minutes
